Just make sure you have the lightsaber finesse perk so your to hit rolls are using dexterity not strength and put some points into dex, doesn't have to be too many since as a Consular you will need wisdom and charisma more but just get it to the point where you can consistently land attacks and you're golden.

One more thing I forgot to add make sure you have the correct perks for the weapon you are using, if you are going with single handed make sure you have the duelist perk so you get that attack bonus and if you are going double bladed or two weapons get the two weapon fighting perk so that attack penalty with off hand weapon gets negated.

The exact damage done depends on the roll and the strength of your character and their weapon. Certain things can "enhance" your attack roll, like having mods equipped to your 'saber with an attack modifier.
Your stats can also increase your chance to hit, such as your strength stat.
